What could be cooler on a steamy July night than fresh house-made margaritas on the rooftop? Leaving your blender behind and letting a professional rim the glasses, that’s what! The Rio has locked down this summer cocktail tradition and then raised the bar by serving some of the ‘best Mexican food this side of the Rio Grande’.

When I visited last week, a bartender told me that The Rio franchise is the largest seller of Jose Cuervo in the nation. The Boulder bar goes through at least 60 cases of liquid gold every week! The citrus-based mix for the Rio Margs is made in big batches daily to keep throngs of diners satisfied. But, his favorite drink to mix is a Big Tex Marg because he gets to add some flair to bold lime juice and smooth 100% blue agave tequila. Food and drinks aside, there are even more reasons to visit The Rio’s rooftop…

Since its humble beginnings in 1986, when The Rio was a single south-of-the-border restaurant in Ft. Collins, the organization has donated to local nonprofits that further education, healthy lifestyles, eco-friendly ideas, and the arts. They’ve also supported Team Rio Grande’s Elite squad of cyclists for 11 years running and ‘Colorado’s seriously fun amateur racing program’ tears it up at national championship races. Lucky for us, the team at The Rio in downtown Boulder has also been cool enough to sponsor 2140 and host our upcoming Happy Hour event on July 25th.
